TaterTot Casserole

This recipe is another one of my  Comfort foods. I use the VA Chicken Style-Broth Mix in this one and it makes for a wonderful Casserole. Who doesn’t love Tater Tots? For that matter who doesn’t love Potatoes? I consider them to be one of my favorite veggies in the world. I had worried about the Tater Tots sogging due to the gravy, but let me assure that they do not sog at all. Mine come out crispy and perfectly browned. The gravy just accentuates the incredible flavor of the Tots and vegan Chick-N.  I use the Chick-N from my Skillet Chick-N Pot Pie recipe for this one and it works perfectly for me.

Serves 6


2 pounds frozen tater tots


2 tablespoons olive oil
1 1/2 pounds vegan chicken, sauteed and chopped, about 5 cups (such as Soy Curls or seitan)
Sea salt and fresh ground black pepper, to taste


4 tablespoons olive oil
1 onion, minced
1/2 cup unbleached white flour
1 tablespoon VA Chicken-Style Broth Mix (recipe below)
3 cups unsweetened plain vegan milk (I used West Soy Milk)
Sea salt and fresh ground black pepper, to taste

Preheat oven to 450 degrees.


For Filling:

Heat the oil in a large skillet on medium-high heat. Add the vegan chicken; stir and cook for 8-10 minutes or until golden brown. Season with salt and pepper. Reserve.

For Gravy:

1) Heat the oil in a large saucepan on medium heat. Add the onions; stir and cook for 8 minutes or until the onions are golden brown.

2) Add the flour and Broth Mix; stir and cook using a whisk for 2 minutes or until the flour is golden.

3) Slowly pour the milk into the pan; mix the gravy continuously using a whisk until there are no lumps. Simmer the gravy for 5 minutes, stirring occasionally. Add the cooked vegan chicken to the gravy and mix well. Season to taste with salt and pepper.

4) Oil a 9X13 casserole dish. Pour the gravy mixture into the dish and smooth it out. Arrange the tater tots on the filling. Bake the casserole in the preheated 450-degree oven for 45 minutes or until the tots are golden brown. Serve.
